Cinnamon Toast
Slice of bread
Margarine/Butter
Cinnamon Sugar
Allow at least Two slices of bread per person. Lightly toast the slices on both sides. While still hot, spread with butter/margarine and sprinkle with cinnamon sugar. Put back on the coals until sugar has melted
Baked Pap
2 cups Braai Pap
2 cups Evaporated Milk or Cream
2 cups Cheddar Cheese
2 x 285g cans Creamed Sweetcorn
1 teaspoon Salt
2 tablespoons Sugar
2 teaspoons Baking Powder
Pot Bread
500 g self-raising flour
Half teaspoon salt
1 can beer
Mix all ingredients and leave to stand till the dough doubles in size.
Prepare a flat-bottomed cast-iron pot with a layer of margarine, a sprinkling of flour.
Place balls of dough in pot so bread can be broken into chunks when done.
Place pot on 5 briquettes that have just burnt grey, then another 5 on the lid.
Leave for 50 minutes.
Bread should be done.
Check to see if its cooked through.
Sprinkle some grated cheese on top if you wish.
Replace the lid, put more briquettes on top and leave for 10 minutes.
Remove bread from the pot, slice or break into chunks.
Enjoy with butter and jam, or biltong!
Tuna and Rice Casserole
1 x 58 g packet vegetable soup
1 x 82 g packet tomato soup
400 g rice
60 g dried onion
2x200 g cans tuna
Combine contents of soup packets with rice and dried onion.
Divide mixture in half and place in two heavy plastic bags.
Add a can of tuna and a copy of the cooking instructions to each.
Seal bag well.
To cook, mix 125 ml cold water into soup and rice mixture in a Saucepan.
Add 500 ml water and bring mixture to the boil.
Reduce heat and simmer, covered, for 15 to 20 minutes or until all liquid has been absorbed.
Drain and flake tuna and stir into rice mixture.
Heat through and serve hot. Makes 2 x 4 servings
High Energy Snack
The nuts and raisins in this snack give you protein and energy.
150 g seedless raisins
150 g sultanas
100 g unblanched almonds
100 g dried apricots
1 x 68g pkt chocolate pieces, e.g. Smarties
100 g macadamia nuts
100 g walnuts
100 g cashew nuts
Combine all ingredients and divide into individual packets.
Store in airtight container. Makes 4 - 6 packets.
Handy Hints
- A Pinch of turmeric added to the water or oil in which potatoes are cooked give the potatoes a nice golden brown colour.
- It is often difficult to braai fatty meat because of the flames created by the fat. To prevent this, place lettuce leaves on the coals beneath the meat.
- Rub a grid with half a raw onion to prevent meat from sticking to it.
- To ensure mealies cook soft quickly, only add salt towards the end of the cooking time.
- When baking food or keeping it warm. Place the shiny side of the foil toward the food (to reflect the heat towards the inside). To store food in a cool box, place the shiny side toward the outside (to reflect the heat outwards).
- If you have cooked scrambled eggs for too long and they are dry, stir an extra beaten egg into the scrambled eggs.
- To keep salt dry in humid climates place a few grains of rice in the salt shaker.
- Add a pinch of salt to powdered milk to improve the taste.
- To make 1 cup of milk, mix 4 tablespoons of milk powder with 1 cup of water.

Biltong and gravy
This is also a bulk recipe that can be divided into four equal parts for meals that serve two
Ingredients:
1 cup instant potatoes
1 pkt sausage/beef gravy mix campers (add to 1 1/2 cups water).
2 Tbs powdered milk
Biltong (dried beef)
Method:
Combine all dry ingredients in a zipper-lock bag. To prepare, just place all ingredients in your bowl. Add 1 cup boiling water. pour the bagged ingredients and water into a pot. Bring to a boil.
Mix, cover, and let stand for 5 minutes. Stir once or twice. Lower heat to simmer; cover, and cook for 5 minutes. Let stand 5 minutes. Fluff with a fork.
Fluff and enjoy!
Nutty rice
Ingredients:
5 Cups uncooked instant brown rice Wild beans & rice
1 1/2 Cups sunflower seeds
1 1/2 Cups slivered almonds
1/4 Cup parsley flakes
1/4 Cup chicken bouillon granules .
6 Cups water

There is nothing more important than energy while hiking or taking long trips. Wild beans and rice is without a doubt an
essential while hiking. All that is needed is already prepared packets of rice that needs boiling.
